The Agricultural Utilization Research Institute hosted a food and health event on Thursday in the Twin Cities. The day’s discussions were focused on the latest industry trends, exploring the journey food takes from farm to plate. AURI Executive Director Shannon Schlecht says the event took a look at food’s role in health. “Are there different ways food can be used in terms of ingredients for certain diseases? How can food take the place of prescription medications? Those are some of the areas that were explored.” Schlecht says key audiences for the event included the food industry value chain, entrepreneurs and consumers. As a whole, the day was about connecting regional resources. “The networking at an event like this can really help propel those ideas and opportunities forward.”
