Process potato harvest has already started for a few farmers in the northern Red River Valley. Near Larimore, North Dakota, Casey Hoverson plans to start harvest in the next few weeks. “We should start harvesting around September 8. It was a slow start in the spring, because it was cold. The crop is smaller, but we think it will catch up,” says Hoverson. “There was no drowned out and the crop looks nice. It was pretty hot this summer and there may be issues there, but hopefully, the potatoes can bulk up around Labor Day.”
