The popularity of cheese, yogurt, butter, cottage cheese and other dairy products is helping some dairy farms get a larger milk check. A new report from the CoBank Knowledge Exchange says dairy herds producing higher levels of butterfat and protein have seen the benefit. With annual production of 33,000 pounds of milk per cow, the report said high-component dairy herds in the Upper Midwest had an advantage of more than $345 per cow. For a 1,000-cow dairy, that represents over $345,000 in additional income.
