A $13.6 million indoor farm is being planned for the Mankato, Minnesota area. Verdant AgriTech is building the facility to grow organic microgreens and blue oyster mushrooms. The site will be larger than a football field and provide year-round products for the restaurant business. Construction could begin late this year or early in 2027.
