Ninety percent lean beef trimming, used in ground beef formulations, has been trading at record-high prices. Perham Stockyards and Tri-County Stockyards owner Mitch Barthel says it’s a combination of things that has beef prices soaring. “The Covid shortage from two years ago had the market piled up because the cows couldn’t get harvested. That drove the prices lower and with the drought, people liquidated their cow herds and drove these markets higher due to a shortage of cows.”
