A new meat processing facility at Waubun, Minnesota is expected to be up and running as soon as June. The project has been several years in the making. “We actually started this project in 2017; it was pre-COVID and my friend, Doyle Turner and I, were trying to figure out a way to bring infrastructure to our community and also to create jobs,” said Paul Benson. “Being a beef producer and a butcher, the goal is to create a sustainable hub that many different folks can grow off of in our community.” This facility will include an educational component. Benson says grant funds from the Minnesota Department of Agriculture, Minnesota Farmers Union and others have been instrumental in bringing this project to life.
