National Pork Board Director of Domestic Market Development Neal Hull spoke during the Minnesota Pork Congress in Mankato. “We have to start looking at reaching younger consumers,” said Hull. “Millennials and GenZ consume less than half the pork a Boomer does today.” Pork is also becoming more of an ingredient for the younger generation rather than the center of the plate. Taste and flavor will be a big focus in marketing pork to a changing demographic.
