A Grand Forks-based family-run food company called Three Farm Daughters has launched its first products. The artisanal pasta and wheat flour is produced with a patented wheat variety called GoodWheat. “Our family farm has been growing GoodWheat for three years now and the more we got familiar with variety, it was something we wanted to eat ourselves and feed our families,” said co-owner Mollie Sicocello. “That really sparked the idea to bring GoodWheat to the end-consumer.” These specialty wheat ingredients have up to nine times the dietary fiber as traditional wheat, up to 50 percent less gluten and nearly 30 percent fewer calories. “Keeping clean labels and a short ingredient list is important to us,” said co-owner Grace Lunski. The pasta and flour can be found at the Hugo’s supermarkets in North Dakota and Minnesota. The products are also available online.
