Minnesota State Veterinarian Dr. Beth Thompson said efforts are being taken to deal with the displaced hog supply. Some hogs are being diverted to small meat processing plants, but Thompson said those plants are generally booked out into fall and early winter. Hogs are moving through auction markets. “A member of our staff that has oversight on some of those traditional markets in the northern part of the state. He told me he’s seen more hogs moving through those markets in the last week than he saw in the last four-to-five years combined.” Minnesota is depopulating more pigs than any other state. Thompson emphasized these are healthy animals and are being euthanized due to the loss of processing capacity.
