The National Pork Board is focused a multicultural audience. “We were down in Miami earlier this year for a board meeting and we did a Latin immersion,” said Todd Erickson, who is a member of the National Pork Board. “They are 60 million strong in the U.S. and have a lot of buying plate.” With this consumer segment, Erickson said pork is promoted as an ingredient rather than being center-of-the-plate. Erickson is from Northwood, North Dakota.
