The National Bison Association filed a formal complain with the FDA and USDA regarding mislabeling of bison meat products. The complaint was prompted by a surge of human and pet food products containing water buffalo meat labeled only as buffalo. “If it’s water buffalo, it needs to be labeled as water buffalo. Not just buffalo,” says NBA Executive Director Dave Carter. “We’ve spent a lot of time and energy to build a relationship with our customers based on the quality of the eat and the way we raise the animal. ” As bison becomes more popular, consumers are willing to pay a premium price for the meat. The most critical partner in expanding the U.S. bison herd is the consumer. “The average person in the U.S. eats 0.08 pounds of bison per year. If we tripled the size of our business, every person in the country would get a quarter-pounder once a year,” says Carter. “That’s a lot of upside potential.”
