NDSU has released its first new red potato variety since 2014. Dakota Skarlagen has smaller tubers than similar varieties, but more tubers per plant, making it a strong yielder. Skarlagen means scarlet in Norwegian and Danish. It describes the deep red color of the new potato variety and is a nod to the heritage of many potato farmers in North Dakota and Minnesota.
