While it’s still in the very early stages of planning and fundraising, there is a feeling of optimism surrounding Epitome Energy’s plan to build a soybean crush in Crookston. Minnesota soybean farmer Mike Skaug had a feeling of support as he testified before the state legislature last week. “There isn’t any push back we’ve witnessed right now.” Skaug says what makes this plant different is its three-legged approach. “They’ve got the main soybean crush facility, which will handle 65,000 bushels of soybeans each day. Then, we have the side crush set up for food grade and specialty oils. The innovation campus is a new concept. There’s been lots of support and inquiry on that.”
