The cattle market continues to work higher. Cattle numbers are tight, but Ag Market.Net market analyst Jacob Burks also points to consumer demand. Even with a pullback in the general economy, Burks said the demand for beef at the meat case remained strong. “It’s not true elasticity; if consumers want beef, it doesn’t matter what it costs. Right now, it seems like they’re going out there to get beef.”
