Changing consumer buying habits is one of the challenges facing the potato industry. “The baby boomers are pretty traditional eaters,” said Steve Nicholson, vice president of food and agribusiness research, Rabobank. “As you go down the age range, they have a little different view. They do like the fact that potatoes are a fresh vegetable. It’s easy to prepare and it’s convenient, but there’s a perception that it makes me fat. It’s too much starch. Too much carbohydrates so I don’t want all that in my diet.” Nicholson, who spoke at the Potato Business Summit Wednesday, said consumer education is a must.
