Compared to the last report in 2016, the biggest improvement in beef quality was the overall efficiency across the beef chain. The National Beef Quality Audit is conducted every five years to improve quality and minimize economic losses. The report said there was an increase in the frequency of Prime and Choice quality grades while Selects declined significantly. Regarding market cows and bulls, 77 percent were sound with a high score for mobility. That demonstrates an effort by farmers and ranchers to market these animals before mobility and health-related issues surface. The audit said bruising and other carcass issues are leaving dollars on the table and should be addressed.
