U.S. Wheat Associates has released its 2021 Crop Quality Report. Drought impacted the Hard Red Spring Wheat crop, resulting in well-below average yields. The crop had an average test weight of 61.5 pounds per bushel, slightly lower than last year, but similar to the five-year average. Protein averaged 15.4 percent, which is the second highest on record.
