Total U.S. red meat production totaled more than 52 billion pounds last year, three percent higher than the previous year. The USDA annual report on livestock slaughter reports beef production rose four percent, pork production was up three percent, lamb and mutton production was down three percent and veal production was down one percent. The states of Nebraska, Iowa, Kansas and Texas account for 49 percent of U.S. commercial red meat production in 2017, unchanged from 2016.
