USDA Undersecretary of Marketing and Regulatory Programs Jenny Lester Moffitt made that point during the Minnesota Ag and Food Summit. “The pandemic exposed a lot of things like consolidation and the lack of processing capacity,” said Moffitt. “We’re focused on investing significant dollars increasing local/regional processing capacity and addressing competition issues with the Packers and Stockyards Act to ensure producers and consumers are getting fair prices.”
